Double Size
A double boiler, also called a bain-marie, consists of two pans, one slightly smaller than the other, where smaller pan is formed to fit on the inside top and mid-way through the Big Dipper. The food that is cooked is placed in the vessel top and a liquid (usually water) is placed in the lower bowl. The amount of liquid added to the vessel bottom is such that when the container roof is placed on the bottom, the top pan does not come into contact with the liquid. Heat is applied to bring the liquid to a light simmer. The food is heated above the steam cooking liquid.
The unique aspect of cooking in a bain-marie is the heat source. Food cooked in a pan on the stove conventional standard are subject to direct heat and temperature of this heat is determined by adjusting the burner. When a double boiler is used, the heat source is indirect, to slow and even heating temperature and the heat is applied to food depends on the characteristics thermal fluid in the lower bowl. When this liquid is water, it is almost always the maximum temperature to be applied to food in the upper tank (assuming sea level) is 212 degrees Fahrenheit, the boiling point of water. Using liquid Others give different maximum temperatures.
For this reason, a double boiler is used to heat foods that are too fragile to be placed directly on the stove and is often the cooking vessel of choice when preparing delicate sauces or creams that could overcook or burn if direct heat were used. A double boiler is also a good option when melting or tempering chocolate since overheating Chocolate can cause burning and become grainy.
With all that being said, you need a double boiler? The easy answer is "No". & NbspI use the method of cooking a bath frequently, but I do not have a bath and I do not recommend that you buy one or the other. This is simply not necessary. You can easily reproduce the actions of a double boiler using a pan and the appropriate size mixing bowl. In fact, there are several advantages to this arrangement. First, you do not have an extra room for cookware for a place in your kitchen. Second, you can adjust the size of your "bain-marie to size of employment change the size of the bowl and pan as needed. And thirdly, the rounded shape of the cut is much easier to use in terms of agitation and whipped that right sides of the ship up a real bath.
I have a series of tempered glass bowls that work and the upper part of my boiler double. They are the perfect shape - wider and shallower than most mixing bowls, metal - and the fact that they are glass allows me to get at least an idea of how much water is boiling here, even through condensation. This is important because you often want the water in the lower pan to be at a low boil during cooking with a double boiler.
